How do I desalt carne seca?
Soak it in the fridge for 12–24 hours, changing the water 3 or 4 times. Then boil it for 10 minutes before dicing.
What if I cannot find carne seca?
Use leftover roast or grilled beef, which is how the dish is often made in Brazil. Add a little more salt, since it is less salty.
