Tips and questions
- Can I use canned black beans?
- Yes, use 3 cans with their liquid plus a little water, and simmer with the sofrito for 20–25 minutes.
- Why add vinegar and sugar?
- They balance the earthy beans and brighten the flavour; it’s the classic Cuban touch.
- How long does it keep?
- Up to 5 days in the fridge or 3 months in the freezer. It thickens as it sits, so add water when reheating.
