Tips and questions
- How do I stop the apple going brown?
- Toss it in lemon juice as soon as it is cut and mix it with the dressing quickly; the mayonnaise also protects it from the air.
- Can I make it ahead?
- Up to 4 hours ahead in the fridge, but add the walnuts at the last minute so they stay crunchy.
- Can I make it lighter?
- Yes, replace all the mayonnaise with Greek yoghurt and add a little extra lemon and a pinch of salt.
