Tips and questions
- How ripe should the bananas be?
- Very: mostly black skins. They are sweeter and mash easily. You can ripen them faster in the oven at 150 °C for 15 minutes.
- How do I know it is done?
- A skewer in the centre comes out clean or with a few moist crumbs. If the top browns too quickly, cover it loosely with foil.
- Can I freeze banana bread?
- Yes, sliced and well wrapped, for up to 3 months. Toast the slices from frozen or thaw them at room temperature.
