Tips and questions
How do I know the mixture is ready?
When you tilt the pan the mixture slides away in one mass and you can see the bottom for a couple of seconds.
Why is it too soft to roll?
It was taken off the heat too early or not cooled enough. Chill it for an hour and grease your hands with butter before rolling.
How long do they keep?
Two days at room temperature or up to a week in the fridge in a closed box; serve them at room temperature.
