Tips and questions
How do I make niter kibbeh?
Gently simmer butter with garlic, ginger, cardamom, fenugreek and other spices for 30 minutes, then strain. It keeps for weeks in the fridge.
Is chechebsa very spicy?
Berbere has a kick; start with 1 teaspoon and add more to taste. The honey and yogurt soften the heat.
